    Barley Kheer Recipe

    Barley kheer/Barley Payasam- Easy to make, tasty and healthy dessert recipe for kids and toddlers with homemade barley flour. Barely is an easily digestible grain which is rich in fiber, iron and vitamins. Also its known for its cooling properties, hence this barley kheer is ideal during summer as its believed to reduce the body heat.

    This barley kheer can be given to toddlers from one year, Skip whole nuts in the recipe and use nuts powder instead. As this barley kheer is prepared with ghee, milk and nuts, it promotes healthy weight gain in toddlers and kids.  Also Also Check out the recipe for making barley porridge with homemade barley flour.

    Ingredients

    • Barley Flour - ¼ cup
    • Milk - 1.5 cups + 1 cup
    • Palm Sugar/Jaggery Powder/Sugar- 3 tbsp
    • Chopped Nuts or Nuts Powder -2 tbsp
    • Cardamom - 1 or Cardamom Powder- ¼ tsp
    • Ghee - 1 tsp

    Instructions

    • Measure and keep all the ingredients needed. Heat a thick bottomed pan with a teaspoon of ghee.
    • Add in chopped nuts and fry in ghee until golden brown. Remove from flame once done. In the same pan, add 1.5 cups of milk.
    • Add ¼ cup of barley flour to the pan. Mix well with a whisk. Make sure that no lumps are formed.
    • Cook the barley flour in low flame for 5 minutes or until it is completely cooked in sauce thick consistency.
    • Once the powder is cooked to a sauce consistency, add sugar/jaggery along with cardamom. Give a quick stir.
    • Now add in the remaining one cup of milk and boil it further for 5-7 minutes in low medium flame. Stir it occasionally otherwise the kheer may stick to the bottom.
    • Once the kheer is slightly thick in consistency , add in ghee fried nuts/nuts powder and Switch off the flame once done. Let the kheer cool down and feed your baby.

    Notes :

    • This barley kheer becomes thick after cooling down, so switch off the flame accordingly.
    • You could use store bought barley flour instead of homemade barley powder.
    • Stir it continuously while cooking the barely otherwise it stick to the pan and form lumps.
    • Use powdered nuts for small kids instead of whole nuts as they are choking hazard.
    • Always check with your pediatrician before introducing any new food.
