    Bottle Gourd Kheer Recipe for BabiesBottle Gourd kheer/Lauki Kheer - Delicious Indian delicacy is made with bottle gourd, nuts, and milk! Bottle gourd contains essential vitamins and minerals and is also fiber-rich and is good for digestion. But I heard bottle gourd is cornered and disliked by many kids for its bland taste. This bottle gourd kheer is one of the best ways to give bottle gourd and is sure a healthy treat to kids, as it tastes so good and can be given to kids from one year.     Bottle gourd Kheer - Easy and yummy kheer made with bottle gourd, nuts and milk.

    Ingredients

    • Grated Bottle Gourd - 1 cup
    • Brown Sugar/White Sugar- ¼ cup
    • Milk - 2 cups
    • Saffron - few strands
    • Cardamom - 1
    • Ghee - 1 tbsp
    • Cashews - 5

    Instructions

    • Keep all the ingredients ready. Take the bottle gourd, peel and grate it with a grater. Set aside. Heat ghee in a thick bottomed pan and fry the cashews until golden brown. Keep it ready.
    • In the same pan, add grated bottle gourd and saute them nicely in low medium flame until raw smell of the vegetable leaves.  It may take 5 minutes.
    • Then add required amount of milk to it and cook it in low medium flame with occasional stirring until the kheer becomes slightly thick.
    • Now add sugar to the kheer along with saffron, crushed cardamom and mix well. Now stir everything in a low flame for 3 to 5 minutes.
    • Once everything comes together and when the kheer consistency is reached, add  ghee fried cashews. Mix well and switch off the flame once done. When you take the kheer with a spoon, milk and bottle gourd shouldn't look separated and it should come together . That is the correct consistency for the kheer.

    Method :

    Notes :

    • You can add any sweetener of your choice.
    • Skip whole cashews for small babies as they lead to choking hazards. Instead, add nuts powder.
    • Always check with your pediatrician before introducing any new food.
    • This bottle kheer becomes a little thicker when cooled down. So please switch off the flame when it is a little stale.
    • Make sure to introduce each ingredient separately before you try this bottle of gourd kheer to your baby.
