Ingredients
- Grated Bottle Gourd - 1 cup
- Brown Sugar/White Sugar- ¼ cup
- Milk - 2 cups
- Saffron - few strands
- Cardamom - 1
- Ghee - 1 tbsp
- Cashews - 5
Instructions
- Keep all the ingredients ready. Take the bottle gourd, peel and grate it with a grater. Set aside. Heat ghee in a thick bottomed pan and fry the cashews until golden brown. Keep it ready.
- In the same pan, add grated bottle gourd and saute them nicely in low medium flame until raw smell of the vegetable leaves. It may take 5 minutes.
- Then add required amount of milk to it and cook it in low medium flame with occasional stirring until the kheer becomes slightly thick.
- Now add sugar to the kheer along with saffron, crushed cardamom and mix well. Now stir everything in a low flame for 3 to 5 minutes.
- Once everything comes together and when the kheer consistency is reached, add ghee fried cashews. Mix well and switch off the flame once done. When you take the kheer with a spoon, milk and bottle gourd shouldn't look separated and it should come together . That is the correct consistency for the kheer.
