Filter coffee is very famous in South India and I love to have it anytime. Making a perfect filter coffee may sound easy for some. But when I was a beginner, making a good coffee was a big deal. By practice, I got to know the method to make it and now I can make one! I wanted to share my experience through this post that may useful for beginners.
Coffee Filter - It is a stainless steel filter that comes in various size such as small, medium and large etc. It has three parts: upper cup with holes to fill the coffee powder, lower cup to collect the decoction. The upper cup comes with the pressing disc with central stem handle and covering lid. Choosing a correct filter size is very important to make a perfect thick decotion.For example, you need medium size coffee filter for making coffee for four persons.
Coffee powder - Quality of coffee powder and the ratio of coffee:chicory also plays a important role in making a good coffee. I recommend 80: 20 for the ratio of coffee to chicory and I use kothas coffee powder for years. Check for this brand availability in your area, otherwise try with coffee day or Narasus coffee.
Milk and sugar - Use fresh milk for a good coffee and don't add water while boiling milk. I use aavin milk brand(blue pocket). Also add sugar appreciate i.e. neither less nor more as you should feel the mild bitterness in your tongue while sipping your coffee.
How to Make Filter Coffee - South Indian Filter Coffee Recipe
Ingredients
- Coffee Powder - 3 heaped tsp
- Milk - 2 cups
- Water - ½ cup or as needed
- Sugar - 1 tsp
Instructions
- The first step is to prepare decotion. Boil water in a saucepan until rolling boil. In the mean time, take coffee filter and add measured coffee powder in the upper part of the filter.
- After adding the coffee powder , press the powder gently with your hand first and then with the pressing disc. Don't press too hard that will make the dripping of decoction slower. If you press too loose, the dripping will be faster and the result will be watery decoction. So be gentle with your press. Now add the boiled water to it and close with a lid.
- Keep it undisturbed for 10 to 15 minutes.In the meantime, boil milk in a sauce pan and keep it ready.
- After 10 minutes, open the filter and collect the decoction in a container(This is the first decoction which is very thick. If you want to collect the second decoction, add boiled water again to the filter and brew for second time). Add 2 to 3 tablespoon of decoction per coffee to the milk and froth it well.
