Ladies Finger Fry | Vendakkai Poriyal without Coconut - Ladies finger is introduced to me in my childhood for improving mathematics skills from that time it's my favorite vegetable and I make this stir fry often. It's an easy and delicious fry which goes well with sambar or rasam. The perfect Vendakkai poriyal should have a green color and without sticky. When I started cooking, I don't know how to handle Vendakkai and always end up with a slimy poriyal. Later I found that slow cooking is the key to cook this veggie in the right way.

Ladies finger/Bhindi fry in South Indian Style.

- Vendakkai - 20 nos
- Onion -1 medium spiced
- Sambar powder-1 tbsp
- Salt - to taste
To Temper
- Mustard seeds- 1 tsp
- Split Urad dal - 1 tsp
- Seasame oil - 2 tsp
- Curry leaves - 1 sprig
- Hing - a generous pinch

Preparation
- Wash and pat dry the okras really well. There should be no water otherwise the poriyal turns more sticky while frying. Then cut it to desired size and keep aside.Finely chop onions and keep it ready.
Method
- Heat a kadai with oil and add the items to temper in order.Once the mustard seeds cracks and urad dal turns golden brown, add hing and curry leaves.Add onions now and nicely fry till it becomes transparent.
- Once onions turns brown, Add chopped ladies finger and mix well. Then add sambar powder & salt. Mix them for a minute.Keep the flame low.
- Fry the ladies finger in low flame and now it will start to stick into the pan and add more oil to reduce the stickiness.Keep fry them in low flame until the ladies finger is well cooked. It may take 20 minutes. Once done, switch off the flame.

Notes:
1. Cooking in the low flame is very important to make the perfect poriyal.
2. Chop the Vendakkai into medium size pieces neither too thin nor thick.
3. Check the ladies' finger by breaking the tail of it, if it breaks it's good to use.
