Sambar is staple in every South Indian home and I make at least twice or thrice for a week. But never got bored of sambar. I always use homemade sambar powder and I bet ready made powders can't come near the aroma & flavor the homemade sambar powder gives. I make sambar with drumsticks, potatoes, broad beans, carrots, ladies finger and even plantain stem. Being a drumstick lover, I would say drumstick sambar the best. Let's go to the recipe.
Drumstick Sambar Recipe| Murungaikkai Sambar | Kuzhambu Varieties
Ingredients
- Drumsticks - 2 nos
- Toor dal - 1/2 cup
- Small onions - 10 nos
- Tomato - 1 small
- Green chillies - 2 splitted
- Hing - 1/4 tsp
- Tamarind - big gooseberry sized
- Turmeric powder - a pinch
- Sambar powder - 2 heaped tsp
- Water - as needed
- Salt - as required
To Temper
- Oil/ghee - 2 tsp
- Mustard seeds - 1 tsp
- Urad dal - 1 tsp
- Fenugreek seeds - 1/4 tsp
- Red chillies - 2
Instructions
Preparation
- Take drumsticks and wash it twice in running water. Then chop them lengthwise. Pressure cook the toor dal in a small pressure cooker with hing and a cup of water for 3 whistles or until soft. Mash the cooked dal well with a laddle once pressure releases. Set aside. Peel the small onions and chop the tomatoes finely. Keep aside. Soak tamarind in warm water and extract the juice. Add 2 cups of water to the extracted tamarind. Keep it ready.
Method
- Heat a tsp of oil in a kadai and small onions.Saute them well for 5 minutes or until they turn brown. Add tomatoes, green chillies and fry them until soft and mushy.
- Once the tomatoes are cooked well, add drumsticks and fry it for a minute. Then add sambar powder, turmeric powder and salt. Fry it for another minute. Then add tamarind water and mix it well. Bring it to a boil.
