Carrot Rice kheer - I tasted this yummy kheer in my neighbors place, this kheer was served as a dessert after a heavy hearty meal. The taste was so good and I asked her for the recipe and tried at home. It turned out quite nice, it's very easy and simple to make too. She is a good cook and make many Kerala dishes, We used to relish them all!
This carrot rice kheer is ideal for babies from one year as a quick dessert. Do give a try and am sure your little one & the whole family will like it! Now let's get on to check this carrot rice kheer recipe.
Carrot Rice Kheer Recipe for Toddlers and Kids | Celebrating the firstblog anniversary
Ingredients
- Rice - 2 tbsp
- Carrot - 2 medium sized
- Brown sugar/palm sugar - ¼ cup + 2 tbsp
- Milk - 2 cups
- Cardamom - 1
- Cashews - 5
- Almonds - 5
- Ghee - 2 tsp
- Raisins - 1 tsp
Instructions
- Keep all the ingredients ready. Rinse rice well and soak it in water for at least 15 minutes. Soak cashews and almonds for 10 minutes and peel the skin of almonds. Set aside.
- Wash and peel carrots. Cut them into circles. Keep it ready.
- In a mixer grind chopped carrots, soaked cashews & badams and rice together to a slightly coarse paste by adding little water. Set aside.
- In a saucepan, take required amount of milk and add carrot rice paste. Also, add crushed cardamom and mix well. Now cook everything in a low flame for 10 to 12 minutes or until rice gets cooked well and raw smell of carrot leaves.
- Once the rice is cooked, add sugar. Mix well and cook until it becomes thick and kheer consistency is reached. It may take 5 to 7 minutes. In the meantime, ghee fry the raisins and keep it ready.
- Once the kheer is ready, add ghee fried raisins and switch off the flame.
Nutrition
Procedure :
- You could use any sweetener of your choice.
- Always use whole milk to get thick kheer.
- You can make this kheer without rice too.
- Make sure to not to grind carrot rice paste finely, it has to be a coarse paste.
- Skip whole raisins for small babies as they lead to choking hazard.
- Always check with your pediatrician before introducing any new food.
- This carrot rice kheer becomes thicker when cooled down. So switch off the flame when it is little thick.

This carrot rice kheer is suitable for one year as cows milk is used in the recipe. You can try with formula milk instead of cows milk...but dont cook the formula milk...
cook carrot and rice together, add dates syrup, nuts powder cool it down and add formula when its warm
