- Chicken - 500 gms
- Onion - 1 big sized
- Tomato - 2 medium sized
- Coriander leaves - a handful
- Water - 1 cup
- Salt - as required
To Roast and Grind
- Grated coconut - ¾ cup
- Fried bengal gram dal - 2 tbsp
- Fennel seeds - 2 tsp
- Cashews - 10
- Green chillies - 2
- Ginger - 1 inch piece
- Garlic cloves - 6
- Oil - 2 tsp
To temper
- Oil - 1 tbsp
- Bay leaves - 1
- Cinnamon - ¼ inch piece
- Cloves - 2
Preparation
Slice onions, chop tomatoes finely. Slit green chillies.Roughly chop coriander leaves. Set aside. Wash chicken pieces and keep it ready along with other ingredients.
Roast the items given under to "dry roast & grind" in a pan with 2 teaspoon of oil until nice aroma comes. Switch it off once done and cool it down.
Grind the roasted items in a blender with little water to a smooth paste.
Method
Heat a pressure cooker with ghee & oil. Add bay leaves, cinnamon & cloves. Fry for a minute and then add onions. Saute them nicely until golden brown.
Once onions becomes transparent add tomatoes. Fry tomatoes until the raw smell of tomatoes leaves and become mushy. Then add ground masala paste and required salt. Give a quick stir.
Now add the chicken pieces and saute them nicely until the masalas are coated well with chicken. Add a cup of water and bring it to a boil. Pressure cook the chicken for 2 whistles.
Open the cooker once the pressure released. Simmer the gravy until it becomes thick. Switch off the flame once done and garnish with coriander leaves.
