- Grated Bottle Gourd - 1 cup
- Brown Sugar/White Sugar- ¼ cup
- Milk - 2 cups
- Saffron - few strands
- Cardamom - 1
- Ghee - 1 tbsp
- Cashews - 5
Keep all the ingredients ready. Take the bottle gourd, peel and grate it with a grater. Set aside. Heat ghee in a thick bottomed pan and fry the cashews until golden brown. Keep it ready.
In the same pan, add grated bottle gourd and saute them nicely in low medium flame until raw smell of the vegetable leaves. It may take 5 minutes.
Then add required amount of milk to it and cook it in low medium flame with occasional stirring until the kheer becomes slightly thick.
Now add sugar to the kheer along with saffron, crushed cardamom and mix well. Now stir everything in a low flame for 3 to 5 minutes.
Once everything comes together and when the kheer consistency is reached, add ghee fried cashews. Mix well and switch off the flame once done. When you take the kheer with a spoon, milk and bottle gourd shouldn't look separated and it should come together . That is the correct consistency for the kheer.
