Keep all the ingredients ready. Rinse rice well and soak it in water for at least 15 minutes. Soak cashews and almonds for 10 minutes and peel the skin of almonds. Set aside.
Wash and peel carrots. Cut them into circles. Keep it ready.
In a mixer grind chopped carrots, soaked cashews & badams and rice together to a slightly coarse paste by adding little water. Set aside.
In a saucepan, take required amount of milk and add carrot rice paste. Also, add crushed cardamom and mix well. Now cook everything in a low flame for 10 to 12 minutes or until rice gets cooked well and raw smell of carrot leaves.
Once the rice is cooked, add sugar. Mix well and cook until it becomes thick and kheer consistency is reached. It may take 5 to 7 minutes. In the meantime, ghee fry the raisins and keep it ready.
Once the kheer is ready, add ghee fried raisins and switch off the flame.
