Quinoa Kheer Recipe for Babies,Toddlers and Kids | Quinoa Pudding

Quinoa Kheer - Indian style kheer or pudding recipe with quinoa grains, milk and nuts. Protein rich kheer for babies and kids.

Ingredients

  • quinoa - ¼ cup
  • water - ¼ cup
  • Almonds - 6
  • Cashews -6
  • Powdered cardamom - ¼ tsp
  • Milk -1 and ¼ cups
  • Ghee/Clarified Butter - 1 to 2 tsp
  • Sugar/ Powdered palm Jaggery or jaggery or brown sugar -3 tbsp

Instructions

  • Take ¼ cup of quinoa grains in a bowl. Rinse the quinoa in water, repeat 2-3 times until there are no bubbles appear in the water. Then soak it in water for 5 minutes and set aside. For babies below one year prepare formula milk and keep it ready. If using cows’ milk, boil it until frothy. Measure sugar or jaggery, keep aside. If using jaggery, Melt it and strain water to remove with impurities.
  • keep all the other ingredients ready. Heat ghee in a small pressure cooker and let it melt.
  • Add drained Quinoa and saute in low medium flame for 5 minutes. Then add ¼ cup of milk and ¼ cup of water to it. Now pressure cook the quinoa in medium flame for 3-4 whistles in medium flame or until soft. You can also cook the quinoa in a sauce pan with lid covered for 10 minutes. For babies below one year, cook it with ½ cup of water instead of milk.
  • Once the pressure released, open the cooker and mix well once again. Then add remaining 1 cup milk (skip milk for babies below one year), powdered cardamom, saffron, sugar or powdered jaggery or jaggery syrup (if using) .
  • Mix well and cook everything in a low flame for 5 minutes until the kheer becomes slightly thick. Stir it occasionally otherwise it gets stick to the bottom. In the mean time, Take a small pan and add a teaspoon of ghee, roast the cashews and almonds for a minute. Remove from the pan once done and set aside. Once the kheer is ready, add ghee roasted nuts. Once done, switch off the flame. For babies below one year, add prepared formula milk once the kheer is warm and 2 teaspoon of nuts powder instead of whole nuts
